RED VELVET CAKE | |
2 1/2 c. flour 1 1/2 c. sugar 3 tsp. cocoa 1 tsp. baking powder 2-3 eggs 1 c. buttermilk 1 1/2 c. peanut oil 2 oz. red food coloring 1 tbsp. vinegar Sift flour, add sugar, cocoa, baking powder and soda. Sift again. Add eggs and buttermilk and beat on high for 2 minutes. Add oil and food coloring. Add vinegar and blend well. Put in a greased and floured cake pan in a 350 degree oven for 35 to 40 minutes. Check for doneness with cake tester. NOTE: Can bake in a bundt pan. Oven temperature: 300 degrees and time will increase to 1 1/2 hours. Ice with the following Old Tyme Icing or use cream cheese frosting. OLD TYME RED VELVET ICING: 3 tbsp. flour 1/2 tsp. salt 1 c. milk 1 c. shortening 1 c. sugar 2 tsp. pure vanilla 1/4 tsp. butter flavor Cook milk, flour, salt until thick; stirring constantly. Let cool. Cream shortening and sugar very well; add flavors. Combine with the first mixture. Beat well until right consistency. Ice cake. |
