RED VELVET CAKE 
1 c. buttermilk or 1 c. milk with 1 tbsp. vinegar
1 1/2 c. oil
2 eggs
1 oz. red food coloring
1 tsp. vanilla
1 tbsp. vinegar
2 1/2 c. flour
1 1/2 c. sugar
1 tsp. baking soda
1 tbsp. cocoa

Mix the first 3 ingredients in a large bowl. Add food coloring, vanilla and vinegar. Mix well. Sift together the flour, sugar, soda and cocoa. Blend the dry ingredients with the cream mixture. Pour into 2 (9-inch) cake pans (greased).

Bake for 30 minutes at 350°F.

Frosting:

1 (8 oz.) pkg. cream cheese, softened
1 stick butter, softened
1 (1 lb.) box confectioners sugar
1 c. chopped pecans or walnuts

Mix the cream cheese and butter together; add sugar and nuts. Mix well at medium speed until creamy. Spread over cooled cake.
