BRANDY CHEESE CAKE 
3 lbs. cream cheese
7 eggs
1 3/4 c. sugar
1/4 c. vanilla extract
1/4 c. brandy
1 tbsp. butter
1/4 to 1/2 c. graham cracker crumbs

Mix together first 5 ingredients until smooth. Pour into 10 cup or large souffle dish which has been buttered and dusted with graham cracker crumbs. Set in pan of water. Bake at 225 degrees overnight or 9 to 12 hours. Serves 20 to 24. The beauty of this recipe is the convenience of baking while sleeping.
