FRENCH TOAST CHICKEN SANDWICHES 
1/3 c. finely chopped leftover chicken (cooked)
1 tbsp. mayonnaise
1 tbsp. finely chopped celery
1 tsp. pickle relish
1/2 tsp. lemon juice
Salt, pepper, onion powder to taste
2 thin slices of white bread
1 egg, beaten with 1 tbsp. milk
1 tbsp. butter
Cranberry sauce, optional

Mix chicken, celery, mayonnaise, pickle relish, lemon juice and seasonings. Spread between bread slices. Cut sandwich in half diagonally. Coat each side completely with egg mixture. Brown slowly on both sides in hot butter. Serve at once. (Slice of cranberry sauce may be put inside if desired.)
