NINE BEAN SOUP 
1 lb. ham hock & pieces of ham
1 lemon (juice of)
1 clove garlic
1 can tomatoes
1 lg. can tomatoes
3 stalks celery, chopped
1 lg. onion, chopped
Salt & pepper (optional)

Wash 1 1/2 to 2 cups bean mixture. Cover with water and soak overnight. DO NOT DRAIN. Add 2 to 3 quarts water and add all ingredients. Cook all day in slow cooker or simmer at least 4 hours. Flavor improves with age. Let stand and cool; skim off fat and reheat. Can be frozen and reheated.

QUICK BEAN SOAK:

Place washed beans in pan, add 6 cups water, bring to a boil. Boil exactly 2 minutes, cover pan, set aside exactly 1 hour. They are now ready to cook.
