MICRO ENCHILADAS 
2 lbs. ground beef
1 c. onions, chopped
Salt & pepper to taste
12 tortillas
8 oz. Cheez Whiz (I use a bigger one)
4 oz. green chilies, drained for mild, undrained for hotter)
1 can Enchilada sauce

Microwave meat and onions. Drain. Add enchilada sauce. Spoon 2 tablespoons meat on each tortilla. Roll and put in a glass 9 x 13 inch dish. Melt Cheez Whiz with green chilies and pour over tortillas. Top with rest of meat. Microwave on high 6 minutes. Cover and cook 5 more minutes on high.

Since microwave ovens vary in power, you may need to adjust your cooking time.
