VIENNESE CRESCENTS 
1 package yeast
2 cups flour
3/4 cup (1 1/2 sticks) butter
2 tbsp. sugar
2 egg yolks
pinch of salt
1 cup jam or marmalade
1 egg white
1 tbsp. sugar

Dissolve the yeast in 1/4 cup very warm water and allow to sit for 10 minutes. The yeast should develop a foam.

Combine with flour, butter, egg yolks, sugar, and salt to form a dough. Knead 5 minutes.

Roll out on lightly floured board to a thickness of 1/8 inch. Cut into 2 1/2 inch squares. Top each square with marmalade or jam. Roll up to form crescents.

Allow to rise in warm place. When doubled, brush with egg white. Bake on greased baking sheets in 350°F oven for 15 to 20 minutes. Sprinkle with granulated sugar.
