RICE MARSEILLE 
Olive oil
Garlic
1 med. onion
4 sm. zucchini
1 tbsp. tomato paste or 1 fresh tomato squeezed
1 c. rice
2 c. water
Salt
Pepper
Herbs du Provence to taste

Cook onion and zucchini in garlic flavored olive oil until slightly soft. Squeeze seed out of peeled fresh tomato if not using tomato paste. Add salt, pepper and herbs. Add rice and cook slightly. Add water, bring to a boil stirring occasionally.

When rice is at a full rolling boil stir constantly for 1 minute. Cover; turn heat to low and cook covered for 20 minutes or until all water is absorbed. Serves 4 to 6.
