SUGAR FREE CAKE 
2 c. raisins
3 c. water
2 eggs, beaten
1 c. unsweetened apple sauce
3 tbsp. liquid sweetener
3/4 c. oil
1 tsp. vanilla
1 tsp. baking soda
1/2 tsp. salt
1 1/2 tsp. cinnamon
1/2 tsp. nutmeg
2 c. flour
1 c. chopped nuts

Combine and cook raisins and water until water is absorbed; cool. Combine eggs, applesauce, oil, vanilla, and sweetener. Sift flour, soda, salt, and spices. Add to egg mixture. Add raisins and nuts. Pour into floured bundt or tube pan. Bake at 350 degrees for 1 hour. Cool 10 minutes, then remove from pan.
