CHICKEN CHINESE 
2 whole chicken breasts or 1 cut up fryer
2 c. sliced celery
1 c. mushrooms, canned or fresh
1 green pepper, sliced
1/2 c. broth from chicken
1 can cream of mushroom or cream of chicken soup
2 tbsp. diced pimento
1 (5 oz.) can chow mein noodles or rice noodles
1 c. cashew nuts (optional)
Salt & pepper to taste

Cook the chicken for 10-12 minutes on high in a 3 quart covered casserole. Remove from oven and let cool. Remove meat from the bones and place back in the casserole dish with the broth.

Combine the remaining ingredients except the noodles and nuts. Cook 10 minutes on high, then add the noodles and nuts; cook for 2 minutes more. Stir and serve. Any 2 cups of cooked meat: beef, pork, turkey, shrimp are delightful substitutes in this recipe.
