CHICKEN SALAD CHINESE STYLE 
1/4 c. soy sauce
2 tsp. prepared mustard
1 tbsp. vegetable oil
2 1/2 c. chicken, cooked and cut into thin strips
3 c. cooked rice, cooled (white rice)
2 c. sliced green onions, including tops
1 sm. head lettuce, shredded
Mayonnaise
1 (3 oz.) can rice or chow mein noodles

Blend soy sauce, mustard, and oil. Add chicken and toss lightly. Allow to stand about 1 hour. Stir in rice and green onions. Adjust seasonings if necessary. Chill. Spoon onto beds of lettuce. Top with mayonnaise and sprinkle with noodles. Serves 6.
