HOT PICKLE RELISH 
Grind 2 red peppers, 2 green peppers, 4 large onions, and 4 stalks celery. Add 4 quart ground cucumbers and 4 tablespoons salt. Mix well; set aside for 3 hours; drain. Add 4 cups sugar, 4 cups vinegar, 2 teaspoons black pepper (optional), 2 teaspoon turmeric, 1 teaspoon mustard seed, and 1 teaspoon celery seed; simmer 40-45 minutes, stirring often. Place in sterilized pint jars and seal.
