SPANISH RICE AND BEEF | |
4 slices bacon 1 med. onion, chopped 1 1/4 lbs. ground beef 1 1/21 tsp. salt 1 (No. 2 1/2) can tomatoes 3/4 c. uncooked rice 1/2 tsp. paprika Lay 4 slices of bacon together and with a knife or shears cut into small pieces. Saute bacon in skillet until done, remove from skillet and pour off about half the fat. Brown onion in remaining bacon fat; add ground beef and salt and cook until beef is just grey in color. Add tomatoes, cooked bacon and well washed rice and paprika. Turn into a ground casserole. Cover and bake in moderate oven, 350 degrees for 1 1/2 hours or until rice is tender. Add hot water if needed during cooking. 5 servings. |
