CURRIED SPINACH SALAD 
Spinach
Orange, chopped
Apple, chopped
Leaf lettuce
Green onion, chopped
Raisins
Peanuts

DRESSING:

1/4 c. orange juice concentrate
1/4 c. oil (half olive and half vegetable oil is best)
1 tsp. curry

Mix greens together. Add fruit and nuts. Toss with dressing and serve.
