PUMPKIN - NUT COOKIES 
1/4 c. shortening
1/2 c. white sugar
1 egg, beaten
1/2 c. canned pumpkin
1 c. sifted flour
2 tsp. baking powder
1/4 tsp. salt
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1/8 tsp. ginger
1/2 c. raisins
1/2 c. nuts, chopped

Cream shortening and sugar together. Add eggs and pumpkin. Mix well. Add flour, baking powder, salt and spices together. Stir in dry ingredients until blended. Add raisins and nuts, drop by teaspoonfuls onto greased cookie sheet. Bake at 350 degrees for 15 minutes.

NOTE: Gas ovens use 350 degree temperature for 15 minutes. However, electric ovens might use less heat and less time to bake. Makes 2 dozen cookies. Recipe can be doubled to make 4 dozen.
