PASTITSIO 
1/2 stick butter
2 lb. hamburger
1 med. onion, diced
1 c. tomato paste
1/2 c. hot water
10 whole cloves
1 stick cinnamon
Salt and pepper

Brown hamburger and drain. Simmer all other ingredients with hamburger, about 30-45 minutes. Remove cinnamon stick and cloves.

16 oz. long or elbow macaroni

Cook and drain.

1/2 stick butter
1/2 c. Parmesan
Salt and pepper
1/2 tsp. nutmeg

Add to cooked macaroni. Beat 1 egg plus 1 white of egg and add to macaroni.

WHITE SAUCE OR BESILMIL:

2 tbsp. butter
3 1/2 tbsp. flour
2 c. milk
1 egg yolk
Salt and pepper
1/4 tsp. nutmeg

Cook until slightly thickened.

Preheat oven to 350 degrees. Layer half of macaroni in buttered pan. Put all meat sauce on next. Then remaining macaroni. Then white sauce. Shake pan to settle white sauce down through mixture. Then sprinkle Parmesan cheese on top and bake until lightly browned.
