LEMON CHICKEN AND GONZO BEANS 
4 garlic cloves
1 lg. onion
1 tsp. turmeric
1/4 c. lemon juice
2 (12 oz.) cans garbonzo beans (chick peas)
Salt, pepper, olive oil, and soy sauce
6 servings of chicken: 3 breasts or 3 leg quarters, or 6 drumsticks

EQUIPMENT:

Lg. baking pan with cover

Mince the garlic and chop the onion and saute them until they are golden brown. Add the lemon juice, turmeric, and chick peas along with the canning liquid and mix. Skin the chicken and lay the pieces in the chick peas, basting them with the liquid. Cover and bake at 400 degrees for 20 to 35 minutes until the chicken is cooked through. Cut the chicken into bite sized pieces and mix with the chick peas. Add salt and pepper to taste. Serve over rice with soy sauce.

Hint: Tell young fans of the Muppets that chick peas are Gonzo beans and they should dig right in. If that works, try telling them that Brussels sprouts are Muppet cabbage. It works for me.
