DANISH POTATO SALAD | |
1/4 c. vinegar 1/4 c. water 1/4 c. sugar 1/4 tsp. salt Dash of pepper 1 tsp. prepared mustard 2 eggs, well beaten 1 c. salad dressing 4 c. cubed potatoes 2 hard cooked eggs, chopped 1 tbsp. minced onion 1/2 c. chopped cucumber (optional) 1 tbsp. chopped pepper Combine first 6 ingredients. Bring to a boil, reduce heat gradually. Beat in well beaten eggs, cook stirring constantly, until slightly, thickened about 5 minutes. Beat in salad dressing. Toss together remaining ingredients. Pour on dressing, toss gently. |
