ZUCCHINI ROUNDS 
1/3 c. biscuit mix
1/4 c. grated Parmesan cheese
1/8 tsp. pepper
2 slightly beaten eggs
2 c. shredded zucchini squash

Mix all together and put large spoonfuls onto hot griddle or skillet. Fry until brown on both sides.

These are delicious as a side dish with any meat dish.
