1/2 c. shortening 1/2 c. sugar 1/2 c. brown sugar 1 egg 1/2 tsp. vanilla 1/2 c. shredded coconut 1/2 tsp. baking soda 1/4 tsp. baking powder 1/4 tsp. salt 1 c. quick cooking oats 1 c. wheat flakes cereal Mix thoroughly shortening, sugars, egg and vanilla. Stir in remaining ingredients. Drop by rounded teaspoons 2 inches apart onto greased baking sheet. Bake at 375 degrees for 9-11 minutes until set but not hard. Cool about 3 minutes on baking sheet. For variation, add chocolate chips. Makes about 4 1/2 dozen. |
