CREAMY SWEET POTATOES 
3 to 4 lg. sweet potatoes
1/2 c. sour cream
1/4 c. brown sugar
Pinch salt
1 c. miniature marshmallows

Boil or microwave potatoes until soft. Peel and mash. Add sour cream, sugar and salt and mix. Top with marshmallows. Bake covered or microwave uncovered, until marshmallows. Melt. Stir well.

Since microwave ovens vary in power, you may need to adjust your cooking time.
