1 c. chopped zucchini
1 c. chopped tomato
1/2 c. chopped onions
1/3 c. grated Parmesan cheese
1 c. milk
2 eggs
1/2 c. Bisquick
1/2 tsp. salt
1/4 tsp. pepper
Tomato and zucchini slices for garnish

Preheat oven to 400 degrees. Grease a 9-inch pie plate.

Sprinkle zucchini, tomato, onion, and cheese in pie plate. Beat remaining ingredients together until smooth (15 seconds in blender on high or 1 minute with hand beater). Pour into plate. Bake at 400 degrees for 35 minutes or until knife inserted in center comes out clean. Cool 5 minutes. Garnish with tomato and zucchini slices.
