TERIYAKI MARINADE 
1/3 c. low-sodium soy sauce
2/3 c. water
2 tbsp. apple juice concentrate
2 cloves garlic, crushed
2 tsp. freshly grated ginger root or 1/4 tsp. ground ginger

Combine all the ingredients and mix well. Store in the refrigerator. (For best results, make marinade at least 24 hours in advance.)

Makes about 1 cup.

VARIATIONS: When used with - Beef: add another 2 tablespoons apple juice concentrate. Chicken: add 2 tablespoons pineapple juice concentrate. Fish: Reduce the water to 1/3 cup and add 1/2 cup sherry).
