GREEN PEPPER JELLY 
Also good for appetizers - placed over a square of cream cheese.

6 lg. green peppers, cut in pieces
6 c. granulated sugar
1 1/2 c. cider vinegar
1/2 tsp. salt
1 tsp. crushed red pepper
1 bottle pectin
Green food coloring

Cook peppers and vinegar. Put 1/2 of cooked peppers in blender, then place in saucepan. Repeat process with other half of peppers. Add other (except pectin and food coloring) ingredients and boil. Add pectin. Cook until thick. Add food coloring. This can also be made with red peppers and red food coloring if desired.
