DAVE'S SPICY PECAN PUDDING CAKE | |
CAKE: 2 tbsp. butter 1 c. granulated sugar 1 c. milk 2 c. all-purpose flour 2 tsp. baking powder 1/2 tsp. salt 1 tsp. cinnamon 1/2 tsp. allspice 1/4 tsp. nutmeg 1 c. chopped pecans Pecan halves 1/4 tsp. cloves SAUCE: 1 1/2 c. firmly packed brown sugar 1 1/4 c. water 3 tbsp. butter Combine in saucepan, brown sugar, water and butter. Bring to a boil to make sauce. Remove and set aside to cool. Cream butter and sugar. Sift together all dry ingredients and add to butter and sugar mixture alternately with milk. Add chopped pecans. Mix well. In a greased 9x9x2 inch pan, spread batter very carefully. Pour sauce over batter. Arrange pecan halves over sauce. Bake at 350 degrees for 40 to 45 minutes until top springs back from touch. Serve warm with sweetened whipped cream. Serves approximately 8. |
