SQUASH CASSEROLE 
2 lb. fresh squash
1 carrot, grated
1 onion, chopped
1 can cream of chicken soup
1/2 pt. sour cream
1/2 pkg. herb stuffing mix
1 stick butter

TOPPING:

1/2 pkg. herb stuffing mix

Cook squash until tender. Combine next 5 ingredients. Pour into buttered casserole dish. Put remaining stuffing mix on top. Bake at 375 degrees for 25-30 minutes.
