APPLESAUCE-RAISIN BREAD | |
2 c. buttermilk baking mix 1/2 c. golden raisins 1/2 tsp. ground ginger 1 lg. egg 1/2 c. light brown sugar 1 c. chopped walnuts 1 tsp. ground cinnamon 1/2 tsp. freshly grated nutmeg 1 c. unsweetened applesauce Optional: Corn syrup and Apple Nut Topping. Heat oven to 350 degrees. Grease 9 x 5 x 3 inch loaf pan. In large bowl combine baking mix, walnuts, raisins, cinnamon, ginger and nutmeg. In small bowl using wire whisk or fork, thoroughly beat egg, applesauce and brown sugar; stir into dry ingredients until just blended. Pour batter into prepared pan. Bake 40 to 45 minutes until toothpick inserted in center comes out clean. Cool in pan on wire rack for 5 minutes. Remove bread from pan. Cool completely on rack. Makes 1 large loaf. APPLE NUT TOPPING: If using Apple Nut Topping, brush top of bread with corn syrup. In a small bowl, combine 1/2 cup chopped red apple, 1/3 cup pecan halves, 2 tablespoons golden raisins and 1 tablespoon granulated sugar; toss to mix. Sprinkle on top of loaf. |
