TUNA DOODLE MELTS 
1 (12 1/2 oz.) can tuna, drained
1/3 c. chopped celery
3 tbsp. chopped onion
1/2 c. chopped pimento olives (optional)
1/2 c. mayonnaise
Pepper to taste
6 English muffins, split
12 slices cheese

Place tuna in bowl and break up into small chunks with fork. Add celery, onion and optional olives. Stir in mayonnaise and mix well to combine. Season with pepper to taste.

Lightly toast English muffins under broiler. Divide tuna mixture among 12 muffin halves and broil until hot and bubbly. Add cheese slices the last minute. May be heated in microwave.

Since microwave ovens vary in power, you may need to adjust your cooking time.
