HONEY FRUIT BREAD | |
2 1/2 c. flour 4 1/4 tsp. baking powder 1/4 tsp. baking soda 1/2 tsp. salt 1/2 c. bran 1/2 c. dried figs, chopped 1/4 c. candied orange peel, chopped 2 eggs, slightly beaten 1 c. milk 1/3 c. brown sugar 1/3 c. honey 1 tbsp. lemon juice 2 tbsp. shortening, melted Sift flour; measure; add baking powder, soda and salt; sift again and add bran and fruit; mix well. Combine eggs, milk, brown sugar, honey, lemon juice, and melted shortening (slightly cooled); pour into flour mixture and stir just enough to moisten the dry ingredients. Do not beat. Turn into a greased loaf pan (9 1/2 x 5 1/2 inches) and bake in a moderate oven (350 degrees) for about 1 hour. |
