PINEAPPLE UPSIDE DOWN CAKE | |
1 pkg. white or yellow 2-layer cake mix 1/4 c. butter 1 c. brown sugar 8 slices crisp pineapple 8 Maraschino cherries In a mixing bowl, prepare one package white or yellow cake mix according to package directions. In family skillet, melt butter over low heat. Spread brown sugar evenly over the butter. Place pineapple slices on top of brown sugar. Add a cherry to the center of each pineapple slice. Pour cake mix batter over the food in the skillet; I use about 3/4 of batter. Cover and place over medium heat, when cover is hot, reduce heat to low. Bake for 30 minutes. Remove from range, allow to cool. Uncover. Turn out on large platter or dinner plate. Makes 8 servings. |
