2 med. size zucchini, sliced thin
1 lg. onion
1 1/2 lb. hamburger
1/2 tsp. salt
1/8 tsp. pepper
1 (6 oz.) pkg. stuffing mix
1 c. grated carrot
1 can cream of chicken soup
1 c. sour cream

Grease 2 quart casserole. Cook zucchini (don't over cook) and drain. Brown hamburger and onion. Prepare stuffing mix according to directions on package. Spread 1/2 meat and onion in bottom of casserole. Top with 1/2 stuffing mix.

Combine soup, sour cream, grated carrot and zucchini. Pour over stuffing layer and add remaining meat and onion. Top with stuffing mix. Bake 45-60 minutes in 350 degree oven.
