CHICKEN CASSEROLE | |
1 boiled, skinned, deboned & diced up chicken (drain chicken) 1 c. of chicken broth 1 box stuffing mix (I use corn bread) 1/2-3/4 stick butter, melted or softened 1 sm. onion, diced 1 carton sour cream 1 stick celery, diced 1 can cream of chicken soup 1. Stir stuffing mix, onion, celery, package of herbs and butter together and put about 2/3 of it in the bottom of a baking dish. 2. Spread all the diced chicken on the stuffing mixture. 3. Blend the sour cream and chicken soup together until smooth and spread over chicken. Top with the rest of the stuffing mixture. Pour the 1 cup of reserved chicken broth over all of this and bake at 350 degrees for 15-20 minutes. It does well to microwave too. I like it cold also. It can be fixed ahead of time. |
