ENCHILADAS 
2 lbs. ground beef
2 pkgs. taco seasoning
1 can diced green chilies
1 can Mexican corn
2 (4 oz.) cans mushrooms
2 cans black olives, sliced
2 lbs. Mozzarella cheese, shredded
2 lbs. mild Cheddar cheese, shredded
Soft tortillas
1 lg. can enchilada sauce
1/2 sm. onion, chopped

Brown ground beef, onion, green chilies. Add taco seasoning, corn, mushrooms, olives and simmer. Pour a little enchilada sauce in a small pan and dampen tortilla on one side. Fill with mixture. Add a little of each cheese and roll. Line filled tortillas in a 9x11 inch pan and pour remaining enchilada sauce over top. Sprinkle remaining cheese over top and bake at 375 degrees for 1/2 hour.
