MEATLESS LASAGNA 
1 onion, chopped
1 green pepper, chopped
1 clove garlic
3 tbsp. chopped parsley
12 fresh mushrooms, chopped
1/2 can pitted black olives
1 lb. cottage cheese
1 box frozen spinach or broccoli
1 pkg. grated Mozzarella cheese
1 box Parmesan cheese
Lasagna noodles
1 lg. jar spaghetti sauce

Saute in olive oil the onion, green pepper, garlic, parsley and mushrooms. Add spaghetti sauce, olives and simmer. Cook broccoli/spinach a bit and mix with cottage cheese. Cook lasagna noodles 11 minutes and drain. In a 9"x13" pan layer noodles, sauce, cottage cheese mix, more noodles, more sauce, each time sprinkling lots of Mozzarella and Parmesan on layers. Sprinkle lots of cheese on top. Bake at 350 degrees for 50 to 60 minutes. Serves 10.
