MEXICAN TURKEY CASSEROLE 
1 1/2 c. chopped cooked turkey or chicken
1 (12 oz.) jar chicken gravy
1 (8 oz.) carton dairy sour cream
1 (4 oz.) can green chili peppers, drained
2 tbsp. sliced pitted ripe olives
2 green onions
1 1/2 c. coarsely crushed corn chips
1 1/2 c. shredded cheddar or Monterey Jack cheese
1 lg. tomato, chopped
Shredded lettuce

In a large bowl, combine the turkey gravy, sour cream, chili peppers, green onions and olives. Grease the sides of a microwave safe 1 1/2 quart casserole. Sprinkle 1/3 of the corn chips over the bottom of the casserole. Pour 1/2 the turkey mixture over chips. Top with 1/2 the cheese. Repeat layers, reserving last portion of corn chips.

Cook covered on 100% power (high) for 9 to 12 minutes or until heated through. Top with reserved corn chips. Serve with tomato and lettuce.

Since microwave ovens vary in power, you may need to adjust your cooking time.
