COUNTRY-STYLE STEAK 
2 to 2 1/2 lbs. top round steak, 1/2 inch thick
2 1/2 c. flour
2 tsp. salt
2 tsp. pepper
3/4 c. oil
1 c. diced onion
1 c. diced celery
14 1/2-oz. can tomatoes, diced
1 qt. milk
1/4 lb. butter

Cut steaks into six equal portions. Blend flour, salt and pepper.

Using a tenderizer, pound seasoned flour into steaks until they are 1 1/2 times their original size.

Heat oil to 400 degrees in a skillet. Sear each steak on both sides until almost brown. Place steaks in a single layer in baking pan. Sprinkle diced onion, celery, and tomatoes on top of steak.

Using drippings in skillet, brown 1/2 cup of seasoned flour from above. Add milk and butter to make gravy a light consistency, and pour over steaks.

Bake in 375 degree oven for 45 minutes or until tender. Makes 6 servings.
