APPLE COLESLAW | |
1 head white cabbage (about 3/4 lb.) 2 eating apples 3 tbsp. lemon juice 2 carrots 1/2 c. mayonnaise Salt and pepper to taste 1. Finely shred the cabbage with a sharp knife and put into a large bowl. 2. Coarsely grate the apples with peeling them. Sprinkle the grated apples with 2 tablespoons of the lemon juice to prevent discoloration. 3. Scrape the carrots, then grate coarsely. Add the apple and carrots to the cabbage and toss well. 4. Mix the mayonnaise with the remaining lemon juice and season to taste. Add to the cabbage mixture, toss thoroughly to combine, then transfer to dish. Serve at once. Serves 4. |
