PA'S CHICKEN SCALLOP FOR MA 
2 tbsp. chopped onion
2 c. chopped celery
butter
1/4 c. flour
2 c. milk
1 c. chicken broth
3 tbsp. finely chopped parsley
1/4 tsp. poultry seasoning
1/2 tsp. salt
1/4 tsp. pepper
2 c. chopped, cooked chicken
1 c. finely chopped cooked ham
3 c. cheese flavored cracker crumbs

Saute onion and celery in butter until tender. Stir in flour. Add milk and broth gradually, stirring until smooth and thickened. Add parsley, seasonings, chicken and ham.

Place a thick layer of crumbs in the bottom of a 2 1/2 quart greased casserole, then a layer of creamed mixture and repeat. Sprinkle remaining crumbs on top. Dot with butter and bake, uncovered for 20 minutes, or until crumbs are browned, in a 425 degree oven. Serves 6.
