SHRIMP-WALNUT SALAD 
3 c. water
1 lb. unpeeled small fresh shrimp
1 c. diced celery
1/2 c. chopped walnuts
3 tbsp. commercial French salad dressing
Leaf lettuce
4 slices fresh pineapple

Bring water to a boil; add shrimp, and cook 3 to 5 minutes. Drain well; rinse with cold water. Chill. Peel and devein shrimp.

Combine shrimp and next 3 ingredients; stir well. To serve, line salad plates with leaf lettuce, and top each with a pineapple slice; mound shrimp mixture on pineapple slice. Yield: 4 servings.
