ZUCCHINI CASSEROLE 
1 pkg. Stove Top dressing
1 can chicken soup
1 can sour cream
1 stick butter
1 small onion
2 c. zucchini, cubed
1 c. grated carrots
1 c. Mozzarella cheese, divided

Melt butter. Add to Stove Top dressing. Mix well. Place zucchini, onion and carrots in saucepan. Add the chicken soup and sour cream; bring to a boil.

In a baking dish, 8 x 8, spread one half of Stove Top. Pour hot zucchini mixture on top. Add 1/2 cup of cheese and then put the other half of Stove Top over it. Add 1/2 cup of cheese on top.

Bake at 350°F for 30 minutes. Cover for 15 minutes, then take off to brown.
