EGGPLANT CASSEROLE 
1 c. eggplant, cooked & mashed well
1 c. cracker crumbs, for topping
1/3 c. Velveeta cheese
1 1/2 c. milk
6 tbsp. butter (for topping)
1 tsp. salt
1/2 tsp. pepper
1 egg, beaten
1 tsp. sugar

Mix together, put in greased casserole. Pour melted butter over top with cracker crumbs. (I mix small amount of butter and crumbs in mixture also.) Bake 1 hour at 350 degrees.
