POWDERED SUGAR BUTTER COOKIES 
1 lb. Land O'Lakes Sweet butter
1 egg yolk
2 tbsp. confectioners' sugar
1 jigger cognac
1 1/2 lb. flour (approx.)
1/2 c. blanched almonds, coarsely chopped and toasted in the oven
Confectioners' sugar for sprinkling

Beat butter very well until creamy and light. Add yolk, sugar and cognoc. Add enough flour to make a soft dough. Add almonds last. Pinch off pieces of dough and shape into balls about 1 1/2 inches in diameter and pat into rounds. Place on ungreased cookie sheets and bake in a preheated 350 degree oven for 15 to 20 minutes or until cookies are a pale sand color. Remove from pans and place on waxed paper. When slightly cooled, sift confectioners' sugar generously over them. Before serving, sprinkle additional sugar. Yield: about 4 dozen.
