SWEET AND SOUR ENDIVE 
1 lg. or 2 med. bunches endive
1/4 lb. bacon
1/4 c. sugar
1/2 c. cider vinegar
1/4 to 1/2 c. water

1. Trim off dark green outer ends of endive, keeping the light green and white stalks. Wash thoroughly. 2. Cut bacon in small pieces; fry until crisp. 3. Pour off 2/3 grease, keep about 2 to 3 tablespoons of grease. 4. Cool grease slightly, add vinegar, sugar and water to bacon chips and grease mix and rewarm mixture; salt and pepper to taste. 5. Pour mixture over endive, chill and serve. Also good on shredded cabbage.
