PUFFED POTATOES 
1 1/4 c. water
1/2 tsp. salt
1 1/3 c. instant potatoes
1 c. sour cream
1/4 c. chopped green onions
2 tbsp. Spice Islands salad seasoning
2 tbsp. butter

Heat water and salt to boiling; stir in potatoes until moistened. Blend in sour cream and onions. Turn into lightly buttered 1 1/2 quart casserole; sprinkle salad seasoning over top. Dot with butter. Bake in 375 degree oven for 15 minutes until puffed and golden. Yield: 4 servings.
