NO BAKE CHEESE CAKE 
2-3 pkg. lady fingers
1 lb. softened cream cheese
1 c. sugar
2 tsp. vanilla
1 tbsp. apricot brandy
1 pt. all-purpose or heavy cream
1 can pie filling

Line 2-quart baking dish with lady fingers along side and bottom. In mixer, beat cream cheese, 1 cup sugar, 2 teaspoons vanilla, 1 tablespoon apricot brandy. Beat until smooth and creamy. Beat 1 pint all-purpose or heavy cream and fold into cheese mixture. Pour on top of lady fingers and chill. When set, top with 1 can of favorite pie filling (i.e., peach, blueberry, cherry, etc.) Serves 12.
