RICE PUDDING WITH SAUCE | |
1 c. rice 3/4 c. raisins 6 c. water 1 tsp. salt 3 eggs, beaten 1 c. sugar 1 1/2 c. vanilla 2 c. milk 1 sm. can Carnation evaporated milk SAUCE: 1 c. sugar 1 1/2 tbsp. flour 1 1/2 c. water 1/2 tsp. nutmeg 1 tbsp. vinegar Red food coloring for color Boil the rice and raisins in the 6 cups water and 1 teaspoon salt until tender. Rinse with cold water. Mix the eggs, sugar, vanilla, milk and Carnation evaporated milk and pour over the rice that has been put into a large casserole. Dot with butter and sprinkle with cinnamon. Bake 1 hour at 350 degrees. SAUCE: Mix 1 cup sugar and 1 1/2 tablespoons flour together and add 1 1/2 cups water, 1/2 teaspoon nutmeg, 1 tablespoon vinegar, cook until thick. Add food coloring to desired color. (Mother's recipe) |
