VEGETABLE CASSEROLE LOW CAL 
1 onion, sliced

Mix together:

2 c. celery, cut into 3 inch strips
2 c. French cut green beans
1 1/2 c. carrots, cut into 3 inch strips
3/4 c. green pepper

Mix and pour over vegetables:

2 c. tomatoes
4 tbsp. butter
1/4 tsp. pepper
2 tsp. salt
3 tbsp. tapioca
1 tbsp. sugar

Bake at 375 degrees for 1 1/2 hours, covered. Stir and bake, uncovered, 1/2 hour more. Serves 4-6. Great recipe for summer time. Use fresh vegetables from the garden.
