POOR MAN'S COOKIES | |
1 c. raisins 2 c. water 1/2 c. butter 1 c. sugar 2 c. flour 1 tsp. baking soda 1 tsp. cinnamon 1/2 tsp. baking soda 1/2 tsp. allspice 1/2 to 1 c. nuts (optional) 2 well beaten eggs (1 yolk removed) 1 tsp. vanilla Boil raisins in water until you have 1 cup juice. While still warm, add shortening. Sift dry ingredients in a large bowl. Add beaten eggs and vanilla to the warm water. Add dry ingredients. Add raisins and nuts. Bake in a jelly roll pan that is greased for about 20 minutes at 350 degrees. Either frost with powdered sugar frosting or dust with powdered sugar. Quick and easy to make. |
