APPLE HONEY GLAZED HENS 
2 Perdue Cornish hens
2 c. apple cider
1/4 tsp. ground ginger
2 tbsp. honey
3 tbsp. butter
Salt and pepper to taste

Mix cider and ginger; boil and reduce to 1/4 cup. Stir in honey and butter. Season hens with salt and pepper.

APPLE STUFFING:

1 pkg. Pepperidge Farm stuffing
2 diced apples
1 c. chopped celery
1/2 c. chopped walnuts
Pinch of ground nutmeg

Stuff hens with apple stuffing. Tie legs together, wings back. Put hens in shallow roasting pan. Pour glaze over hens. Bake at 375 degrees for 55-60 minutes.
