CHEESE PIE | |
1 (9") deep dish pie crust 1 c. shredded cheddar cheese 1/3 c. drained, chopped onions 1/3 c. drained, chopped tomatoes 1 c. half and half 1/4 tsp. salt Dash of Worcestershire sauce 1 1/2 c. shredded Monterey Jack cheese 1 (4 oz.) can green chilies, drained, seeded & chopped fine 1/3 c. drained, chopped mushrooms 3 eggs 1/8 tsp. cumin Preheat oven to 400 degrees. Prick pie crust and bake 10 minutes. Remove. Lower oven to 350 degrees. Sprinkle Monterey Jack cheese and 1/2 cup of cheddar cheese on pie crust bottom, then add chilies. Add onions, mushrooms, tomatoes. Put half and half in blender and add eggs, salt, cumin and Worcestershire sauce and blend for 20 seconds and pour into pie crust and sprinkle remaining 1/2 cup cheddar cheese over filling. Bake 40 to 45 minutes and test with fork. Let stand 15 minutes before cutting. Serves 6. |
